  • 2 Peaches, peeled and diced
  • 0.5 Cups peach preserves
  • 2 Tablespoons soy sauce
  • 1 Tablespoon apple cider vinegar
  • 1 Tablespoon cornstarch
  • 1 Pinch cilantro, fresh

Steps

  1. Heat olive oil in a large skillet over medium heat until hot, about 2 minutes.
  2. Season the diced chicken with sea salt, black pepper, smoked paprika, onion powder, garlic powder, and chili powder.
  3. Add the seasoned chicken to the hot skillet and cook until no longer pink in the center and juices run clear, about 5 minutes. Remove the chicken to a bowl and set aside.
  4. In the same skillet, add the diced peaches and jalapeño. Cook until the peaches soften, about 5 to 6 minutes.
  5. In a small bowl, whisk together peach preserves, soy sauce, apple cider vinegar, and cornstarch until well combined.
  6. Return the cooked chicken to the skillet and stir in the peach preserves mixture, ensuring the chicken and peaches are well coated. Continue to cook, stirring, until the sauce thickens, about 2 minutes.
  7. Garnish with fresh cilantro when serving.
