- 4 Tablespoons olive oil, divided
- 6 Whole garlic cloves, minced
- 3 Cups whole peeled tomatoes with liquid, minced
- 1.5 Teaspoons salt
- 1 Teaspoon crushed red pepper flakes
- 16 Ounces packaged linguine pasta
- 8 Ounces small shrimp, peeled
- 8 Ounces bay scallops
- 1 Tablespoon fresh parsley, minced
Steps
- Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the minced garlic and cook until it starts to sizzle.
- Pour in the minced tomatoes with their liquid, and season with salt and crushed red pepper flakes. Bring the mixture to a boil, then reduce the heat and let it simmer over low heat, stirring occasionally, for 30 minutes.
- In the meantime, bring a large pot of lightly salted water to a boil. Cook the linguine pasta for 8 to 10 minutes, or until al dente. Drain the pasta and set aside.
- In a large skillet, heat the remaining 2 tablespoons of olive oil over high heat. Add the shrimp and scallops, cooking and stirring frequently until the shrimp turn pink, about 2 minutes.
- Add the cooked shrimp and scallops to the tomato mixture, and stir in the minced parsley. Cook until the sauce just begins to bubble, about 3 to 4 minutes.
