- 1 Teaspoon (tsp) kosher salt
- 1 Cup quick-cooking grits
- 2 Tablespoons (tbsp) unsalted butter
- 1 Bunch green onions, minced
- 1 Medium green bell pepper, minced
- 2 Cloves garlic, minced
- 1 Pound shrimp, peeled
- 10 Ounces (oz) can diced tomatoes and green chilies
- 1 Cup Monterey Jack cheese, shredded
- 1 Cup Cheddar cheese, shredded
- 0.5 Teaspoon (tsp) black pepper, ground

- Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
- In a large saucepan, bring the chicken broth and salt to a boil over high heat. Stir in the grits, return to a simmer, then reduce the heat to medium-low. Cook for 20 minutes, stirring frequently, until the grits are creamy and thickened.
- In a skillet over medium heat, melt the butter. Add the green onions, bell pepper, and garlic, and sauté until the bell pepper is softened, about 5 minutes.
