Ingredients

  • 4 Cups chicken broth
  • 1 Teaspoon (tsp) kosher salt
  • 1 Cup quick-cooking grits
  • 2 Tablespoons (tbsp) unsalted butter
  • 1 Bunch green onions, minced
  • 1 Medium green bell pepper, minced
  • 2 Cloves garlic, minced
  • 1 Pound shrimp, peeled
  • 10 Ounces (oz) can diced tomatoes and green chilies
  • 1 Cup Monterey Jack cheese, shredded
  • 1 Cup Cheddar cheese, shredded
  • 0.5 Teaspoon (tsp) black pepper, ground

Steps

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
  2. In a large saucepan, bring the chicken broth and salt to a boil over high heat. Stir in the grits, return to a simmer, then reduce the heat to medium-low. Cook for 20 minutes, stirring frequently, until the grits are creamy and thickened.
  3. In a skillet over medium heat, melt the butter. Add the green onions, bell pepper, and garlic, and sauté until the bell pepper is softened, about 5 minutes.

  7. Bake in the preheated oven for 30 to 45 minutes, or until the cheese is bubbly and beginning to brown.
