Ingredients
- 1 Cup brown rice
- 2 Cups water
- 2 Turkey sausage links, sliced
- 1 Tablespoon garlic, minced
- 0.75 Medium red onion, minced
- 1 Medium green bell pepper, sliced
- 0.75 Cup vegetable broth
- 1 Cup grape tomatoes
- 2 Tablespoons pimento, diced
- 1 Pinch crushed red pepper flakes, to taste
- 1 Pinch Cajun seasoning, to taste
- 1 Pinch black pepper, to taste
Steps
- Pour the brown rice and water into a small saucepan. Bring to a simmer over medium-high heat, then reduce the heat to medium-low. Cover and simmer until the rice is tender, about 40 minutes.
- Preheat a skillet over medium-high heat. Add the turkey sausage and cook until well browned on the outside and no longer pink on the inside. Remove the cooked sausage from the skillet.
- In the same skillet, stir in the minced garlic and red onion. Cook for a few minutes until the onion softens and begins to turn translucent.
- Add the sliced green bell pepper to the skillet and cook for an additional 2 minutes.
- Pour in half of the vegetable broth along with the grape tomatoes and diced pimento. Season to taste with crushed red pepper flakes, Cajun seasoning, and black pepper. Cook until the liquid has almost completely evaporated.
- Stir in the cooked sausage with the remaining broth and simmer until everything is hot.
- Serve the sausage and pepper mixture over the cooked brown rice. Enjoy!
