- 8 Whole lasagna noodles
- 1 Tablespoon (tbsp) olive oil
- 10 Ounces (oz) package frozen chopped spinach, drained
- 2 Tablespoons (tbsp) green onion, sliced
- 1 Pint (pt) part-skim ricotta cheese
- 0.25 Cups Parmesan cheese, grated
- 0.5 Teaspoons (tsp) salt
- 1 Large egg
- 21 Ounces (oz) Alfredo-style pasta sauce
- 1 Cup mozzarella cheese, shredded
- 2 Cloves garlic, minced
- 0.5 Teaspoons (tsp) black pepper, ground
- 0.5 Teaspoons (tsp) Italian seasoning
- 2 Tablespoons (tbsp) fresh parsley, torn (for garnish)
Steps
- Preheat your oven to 375 degrees F (190 degrees C).
- Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes until al dente. Rinse in cold water and drain well.
- In a large saucepan over medium heat, add olive oil. Sauté minced garlic until fragrant, about 1 minute. Add spinach and green onions, cooking until tender. Season with black pepper and Italian seasoning. Remove from heat.
- In a mixing bowl, combine ricotta cheese, Parmesan cheese, salt, and egg. Stir in the spinach mixture until well combined.
- Lay the cooked lasagna noodles flat on a sheet of waxed paper. Evenly spread the cheese and spinach mixture over each noodle. Roll up each noodle from the short end, jelly-roll style.
- In an 8x12 inch baking dish, spread about 3/4 of the Alfredo sauce on the bottom. Arrange the rolled noodles, seam side down, in the dish. Top with mozzarella cheese and the remaining Alfredo sauce.
- Cover the dish loosely with foil and bake in the preheated oven for 30 minutes, or until hot and bubbly and the cheese is melted.
- Remove the foil and bake for an additional 5-10 minutes to allow the top to brown slightly.
