- 2 Tablespoons (tbsp) butter, melted
- 2 Cups fresh mushrooms, sliced
- 2 Cups spinach leaves, torn
- 6 Whole green onions, minced
- 1 8 Ounces (oz) package refrigerated crescent rolls, packaged
- 1 Ounce (oz) package herb and lemon soup mix, packaged
- 0.5 Cups half-and-half
- 4 Large eggs, whisked
- 1 Cup Monterey Jack cheese, shredded
Steps
- Preheat the oven to 375 degrees F (190 degrees C).
- Melt the butter in a skillet over medium heat. Add the mushrooms, spinach, and green onions, cooking for 5 minutes or until tender, stirring continuously. Remove from heat.
- In a 9-inch round pan or pie plate coated with non-stick cooking spray, arrange the crescent roll triangles in a circle, with narrow tips hanging over the rim of the pie plate about 2 inches. Press the dough onto the bottom and sides of the pie plate to fill in any gaps.
- In a medium bowl, stir together the soup mix, half-and-half, and whisked eggs. Add the cheese and cooked vegetables to the egg mixture, stirring until blended. Pour the mixture into the prepared crust. Fold the points of dough that are hanging over the edge back in over the filling.
- Bake the quiche for 30 minutes in the preheated oven, or until a knife inserted into the center comes out clean.
