  • 1 - 8 Ounces (oz) package manicotti pasta
  • 1 - Pint (pt) part-skim ricotta cheese
  • 2 - Whole eggs, whisked
  • 1 - Medium onion, minced
  • 0.25 - Cups Romano cheese, grated
  • 1 - Tablespoon (tbsp) chicken bouillon powder
  • 0.5 - Teaspoons (tsp) garlic salt
  • 0.125 - Teaspoons (tsp) dried thyme
  • 1 - Pinch black pepper, ground
  • 1 - 10 Ounces (oz) package frozen spinach, drained
  • 1 - 8 Ounces (oz) can tomato sauce
  • 1 - Cup mozzarella cheese, shredded

Steps

  1. In a large pot, cook the manicotti pasta in boiling salted water until al dente. Rinse with warm water and drain.
  2. In a large bowl, mix together the ricotta cheese, whisked eggs, minced onion, grated Romano cheese, chicken bouillon powder, garlic salt, dried thyme, ground black pepper, and drained spinach.
  3. To assemble, fill the manicotti noodles with the cheese filling. Arrange the filled noodles in a greased 9x13 inch pan. Pour the tomato sauce down the center of the shells and sprinkle with shredded mozzarella cheese.
  4. Bake in a preheated 350°F (175°C) oven for 25 minutes, or until hot and bubbly.
