Ingredients
- 1 Whole beef tongue
- 0.5 Whole white onion, sliced
- 5 Whole garlic cloves, minced
- 1 Whole bay leaf
- 1 Pinch salt, to taste
- 3 Tablespoons (tbsp) vegetable oil
- 5 Whole Roma tomatoes
- 5 Whole serrano peppers
- 1 Pinch salt, to taste
- 0.5 Whole onion, minced
- 2 10 Ounces (oz) packages corn tortillas
Steps
- Place the beef tongue in a slow cooker and cover with water. Add the sliced onion, minced garlic, and bay leaf. Season generously with salt. Cover and cook on low for 8 hours or overnight until the tongue is tender.
- Once cooked, remove the tongue from the slow cooker. Allow it to cool slightly, then peel off the tough outer layer. Shred the meat into strands and set aside.
- In a skillet, heat the vegetable oil over medium heat. Add the Roma tomatoes and serrano peppers, cooking until they are softened and slightly charred on all sides. Remove from the skillet and transfer to a blender, leaving the oil in the skillet.
- Blend the roasted tomatoes and peppers briefly until the mixture is slightly chunky. Season with salt to taste.
- In the same skillet, add the minced onion and cook until translucent. Stir in the tomato-pepper mixture and cook for an additional 5 to 6 minutes, allowing the flavors to meld.
- Warm the corn tortillas in a dry skillet or directly over a flame until pliable. Fill each tortilla with a generous portion of shredded beef tongue and top with the roasted tomato salsa.
- Serve the tacos immediately, garnished with fresh herbs, lime wedges, and avocado slices if desired. Enjoy the rich, savory flavors of these unique tacos!
