Ingredients

  • 3.5 Pounds (lb) whole chicken, divided
  • 1 Pound (lb) fresh tomatillos, husked
  • 3 Dried red chile peppers
  • 2 Dried California chile pods
  • 2 Tablespoons (tbsp) olive oil
  • 1 Pinch salt, to taste

Steps

  1. Preheat the oven to 350 degrees F (200 degrees C).
  2. Place the tomatillos, red chile peppers, and California chile pods in a small roasting pan or a rimmed baking sheet. Roast for about 20 minutes, turning frequently. If the chilies start to get too dark, transfer them to a food processor or blender.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook, turning to sear evenly on all sides.
  4. Combine the roasted tomatillos and chilies in a blender or food processor and blend until smooth. Season with salt.
  5. Add the tomatillo-chile sauce to the skillet with the chicken. Reduce the heat to medium-low, cover, and simmer until the chicken is tender, about 20 to 25 minutes.
  6. Serve hot with warm tortillas and your choice of rice or beans. Enjoy!
