Ingredients

  • 1 16 Ounces (oz) package linguine pasta
  • 0.5 Cups (c) olive oil
  • 0.5 Cups (c) pineapple juice
  • 0.5 Cups (c) no-pulp orange juice
  • 5 Teaspoons (tsp) orange zest, zested
  • 5 Teaspoons (tsp) lemon zest, zested
  • 1 Teaspoon (tsp) salt, seasoned
  • 1 Teaspoon (tsp) pepper, ground
  • 5 Whole garlic cloves, peeled
  • 1 Pound (lb) medium shrimp, peeled
  • 2 Tablespoons (tbsp) fresh parsley, minced
  • 2 Tablespoons (tbsp) Parmesan cheese, grated

Steps

  1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the linguine, and return to a boil. Cook until the pasta is al dente, about 11 minutes.
  2. While the pasta is cooking, combine olive oil, pineapple juice, orange juice, orange zest, lemon zest, salt, pepper, and garlic in a blender. Blend on high speed until smooth.
  3. Pour the sauce into a large skillet over medium-high heat. Bring to a simmer and cook for 2 minutes. Add the shrimp and parsley; cook until the shrimp are pink and cooked through, about 3 to 5 minutes.
  4. Drain the linguine and place it on a serving platter. Spoon the shrimp and sauce over the pasta, and top with a sprinkle of Parmesan cheese.
