Ingredients
- 1 16 Ounces (oz) package linguine pasta
- 0.5 Cups (c) olive oil
- 0.5 Cups (c) pineapple juice
- 0.5 Cups (c) no-pulp orange juice
- 5 Teaspoons (tsp) orange zest, zested
- 5 Teaspoons (tsp) lemon zest, zested
- 1 Teaspoon (tsp) salt, seasoned
- 1 Teaspoon (tsp) pepper, ground
- 5 Whole garlic cloves, peeled
- 1 Pound (lb) medium shrimp, peeled
- 2 Tablespoons (tbsp) fresh parsley, minced
- 2 Tablespoons (tbsp) Parmesan cheese, grated
Steps
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the linguine, and return to a boil. Cook until the pasta is al dente, about 11 minutes.
- While the pasta is cooking, combine olive oil, pineapple juice, orange juice, orange zest, lemon zest, salt, pepper, and garlic in a blender. Blend on high speed until smooth.
- Pour the sauce into a large skillet over medium-high heat. Bring to a simmer and cook for 2 minutes. Add the shrimp and parsley; cook until the shrimp are pink and cooked through, about 3 to 5 minutes.
- Drain the linguine and place it on a serving platter. Spoon the shrimp and sauce over the pasta, and top with a sprinkle of Parmesan cheese.
