- 1 Cup baby corn, minced
- 1.25 Cups hard apple cider
- 4 Cloves garlic, minced
- 2 Tablespoons (tbsp) brown sugar
- 2 Teaspoons (tsp) salt
- 1 Tablespoon (tbsp) Hungarian sweet paprika
- 1 Teaspoon (tsp) black pepper, ground
- 1 Tablespoon (tbsp) molasses
- 0.25 Teaspoon (tsp) ancho chile pepper, ground
- 0.25 Teaspoon (tsp) dried sage
- 0.75 Teaspoon (tsp) curry powder
- 1 Pinch cinnamon, ground
- 1.5 Teaspoons (tsp) honey
- 1 Tablespoon (tbsp) white vinegar
Steps
- In a skillet over medium heat, cook the ground pork until completely browned. Drain any excess fat.
- In a large slow cooker, combine the cooked pork, minced tomatoes, minced bell pepper, drained pineapple chunks, drained black beans, drained corn, tomato paste, minced green onions, minced baby corn, and hard apple cider.
- Add the minced garlic, brown sugar, salt, sweet paprika, ground black pepper, molasses, ground ancho chile pepper, dried sage, curry powder, ground cinnamon, honey, and white vinegar to the slow cooker. Stir well to combine all ingredients.
- Set the slow cooker to High and cook for at least 4 hours, stirring occasionally to ensure even cooking and flavor distribution.
