Ingredients

  • 2 Pounds (lb) ground beef, ground
  • 6 Medium onions, minced
  • 2 Whole red bell peppers, minced
  • 2 16 Ounces (oz) cans stewed tomatoes
  • 2 15.5 Ounces (oz) cans kidney beans
  • 1 16 Ounces (oz) can tomato sauce
  • 1 16 Ounces (oz) can pineapple chunks, drained
  • 2 Tablespoons (tbsp) chili powder
  • 2 Teaspoons (tsp) salt

Steps

  1. Heat a large Dutch oven over high heat until hot. Add the ground beef and cook until barely pink, stirring constantly to break it into small pieces.
  2. Stir in the minced onions and minced red bell peppers. Cook until the meat has browned and the onions have softened and turned translucent, about 5 minutes.
  3. Pour the mixture into a large mesh strainer and press to expel excess grease.
  4. Return the mixture to the Dutch oven. Stir in the stewed tomatoes, kidney beans, tomato sauce, and drained pineapple chunks.
  5. Season with chili powder and salt.
  6. Bring the mixture to a boil, then reduce the heat to medium-low. Simmer uncovered until the chili reaches the desired consistency, about 10 minutes.
  7. Serve hot and enjoy the sweet and savory flavors of this unique chili.
