  • 2 Tablespoons vegetable oil
  • 1 Whole onion, sliced
  • 1 Whole carrot, sliced
  • 4 Ounces fresh green beans, sliced
  • 1 Large red bell pepper, minced
  • 8 Ounces fresh mushrooms, sliced
  • 1 Whole zucchini, sliced
  • 1 Cup pineapple chunks

Steps

  1. In a medium saucepan, bring 2 cups of water to a boil over high heat. Add the rice, reduce the heat to low, cover, and simmer until the rice is tender and water is absorbed, about 30 to 40 minutes. Fluff with a fork and keep warm.
