- 3 Tablespoons maraschino cherry juice
- 2 Tablespoons brown sugar
- 2 Tablespoons honey
- 1 Tablespoon fresh lime juice (Optional)
- 1 Tablespoon fresh lemon juice
- 1 Teaspoon (tsp) garlic powder
- 0.5 Teaspoon (tsp) ginger, ground
- 0.5 Teaspoon (tsp) black pepper, ground
- 0.5 Teaspoon (tsp) cayenne pepper (Optional)
- 4 Whole boneless, skinless chicken breasts, divided
- 8 Ounces (oz) mushrooms, stems removed
- 1 Small red onion, divided
- 1 Whole red bell pepper, divided
- 0.5 Pints (pt) cherry tomatoes
- 16 Whole pineapple chunks
- 16 Whole maraschino cherries

Steps
- In a large bowl, whisk together the soy sauce, pineapple juice, white wine, hot pepper sauce, maraschino cherry juice, brown sugar, honey, lime juice, lemon juice, garlic powder, ginger, black pepper, and cayenne pepper.
- Add the chicken, mushrooms, onion, bell pepper, and cherry tomatoes to the marinade. Toss until all ingredients are evenly coated. Cover the bowl and marinate in the refrigerator for at least 1 hour, or overnight for deeper flavor.
- Preheat an outdoor grill to medium heat and lightly oil the grate.
- Thread each skewer with the following sequence: 1 piece of chicken, 3 mixed vegetable pieces, another piece of chicken, 1 pineapple chunk, and 1 maraschino cherry.
- Grill the skewers on the preheated grill, turning occasionally, until the chicken is cooked through and the vegetables are tender, about 10 minutes.
- For extra flavor, brush the kabobs with the remaining marinade during grilling.
- Serve the kabobs hot, optionally over a bed of white rice for a complete meal.
