Serving Size: 4
Cooking Time: 35 minutes
Ingredients
- 4 Cloves garlic, minced
- 1 Tablespoon (tbsp) caraway seeds
- 1 Pinch salt, to taste
- 3 Tablespoons (tbsp) olive oil, divided
- 0.67 Cups mild chile peppers, minced
- 1.5 Cups green bell peppers, seeded
- 2 Cups tomatoes, seeded
- 4 Whole eggs
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste
Steps
- In a mortar and pestle, mash the garlic, caraway seeds, and a pinch of salt until a paste forms. Set aside.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced chile peppers and cook, stirring occasionally, until softened, about 5 minutes. Remove from the skillet and set aside.
- Add another tablespoon of olive oil to the skillet. Add the green bell peppers and tomatoes, cooking until the peppers are soft and the tomatoes begin to break down, about 5 minutes.
- Combine the cooked chile peppers with the bell pepper-tomato mixture. Stir in the mashed garlic and caraway seed paste. Spoon the vegetable mixture onto individual plates or a large serving platter.
- Heat the remaining tablespoon of olive oil in the skillet. Fry the eggs until the whites are set and the yolks reach your desired consistency, about 2 to 3 minutes for runny yolks or 4 to 5 minutes for fully set yolks.
- Place the fried eggs on top of the vegetable mixture. Season with a pinch of salt and a pinch of ground black pepper to taste.
- Serve immediately with sliced French bread for dipping and enjoy the rich, aromatic flavors.
