- 3 Tablespoons (tbsp) olive oil, divided

- 1 Tablespoon (tbsp) turmeric, ground

- 2 Teaspoons (tsp) black pepper, ground
- 0.5 Teaspoon (tsp) cumin, ground
Steps
- Place the peeled potatoes in a large pot and cover with water. Bring to a boil over medium-high heat and cook until the potatoes are tender and easily pierced with a fork, about 20 minutes.
- While the potatoes are cooking, heat 1 tablespoon of olive oil in a small skillet over medium-high heat. Add the minced onion and cook until translucent and lightly browned, about 6 minutes.
- Drain the water from the cooked potatoes and mash them in the pot.
- Stir in the caramelized onions and continue mashing until well combined.
- Add the ground turmeric, salt, black pepper, and ground cumin to the mashed potatoes.
