- 1 Pound (lb) semisweet chocolate, melted
- 2 Cups all-purpose flour, sifted
- 0.5 Cup Dutch process cocoa powder, sifted
- 2 Teaspoons (tsp) baking powder
- 1 Teaspoon (tsp) salt
- 10 Tablespoons (tbsp) unsalted butter
- 1.5 Cups brown sugar, packed
- 0.5 Cup white sugar
- 4 Whole eggs
- 2 Teaspoons (tsp) instant coffee granules
- 2 Teaspoons (tsp) vanilla extract
Steps
- Melt the semisweet chocolate over a double boiler or in the microwave, stirring occasionally until smooth. Sift together the flour, cocoa powder, baking powder, and salt; set aside.
- In a medium bowl, cream the butter with the white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the coffee granules and vanilla extract until well blended. Stir in the melted chocolate. Using a wooden spoon, stir in the dry ingredients just until everything comes together. Cover the dough and let it stand for 35 minutes to allow the chocolate to set up.
- Preheat the oven to 350 degrees F (175 degrees C). Line two cookie sheets with parchment paper.
- Roll the dough into walnut-sized balls, or drop by rounded tablespoonfuls onto the prepared cookie sheets, leaving 2 inches between cookies.
- Bake for 8 to 10 minutes in the preheated oven. The cookies will be set, but the centers will still be very soft due to the chocolate. Allow the cookies to cool on the baking sheets for 10 minutes before transferring them to wire racks to cool completely.
