Ingredients

  • 1 Cup couscous
  • 2 Cups chicken broth
  • 0.5 Cup dry white wine
  • 2 Teaspoons (tsp) olive oil
  • 2 Tablespoons (tbsp) fresh lime juice, divided
  • 1.5 Teaspoons (tsp) ground cumin, divided
  • 1 Clove garlic, minced
  • 1 Pound skinless, boneless chicken breast meat, cubed
  • 1 Green bell pepper, sliced
  • 1 Red bell pepper, sliced
  • 1 Yellow bell pepper, sliced
  • 4 Green onions, minced
  • 0.25 Cup pitted black olives

Steps

  1. Prepare the Couscous: Cook the couscous according to package directions, substituting chicken broth for water. Once cooked, fluff with a fork and set aside.
  2. Cook the Chicken: In a large skillet, combine the white wine, olive oil, 1 tablespoon of lime juice, 1 teaspoon of cumin, and minced garlic. Add the cubed chicken and simmer over low heat until the liquid evaporates and the chicken is cooked through, about 5 to 7 minutes.
  3. Season the Chicken: Remove the chicken from the skillet and transfer it to a large mixing bowl. Add the remaining 1 tablespoon of lime juice and 0.5 teaspoon of cumin.
  4. Combine Salad Ingredients: Add the green, red, and yellow bell peppers, green onions, and cooked couscous to the bowl with the chicken. Toss everything together until well combined.
  5. Garnish and Serve: Garnish each serving with a few black olives. Serve immediately or refrigerate to enjoy cold later.
