Ingredients
- 1 Small onion, minced
- 3 Whole garlic cloves, minced
- 2 Tablespoons (tbsp) olive oil
- 1 19 Ounces (oz) can lentil soup
- 1 Cup crushed tomatoes
- 1 10 Ounces (oz) package frozen chopped spinach
- 1 16 Ounces (oz) package ditalini pasta
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste
- 1 Pinch crushed red pepper
- 2 Tablespoons (tbsp) Parmesan cheese, grated
Steps
- In a large pan, brown the minced onion and minced garlic in olive oil over medium heat.
- Stir in the lentil soup and crushed tomatoes. Bring the mixture to a boil.
- Add the frozen chopped spinach and spices (salt, ground black pepper, and crushed red pepper) to the pan. Simmer the mixture.
- Meanwhile, cook the ditalini pasta in a large pot of boiling salted water until almost done. Drain the pasta.
- Mix the cooked pasta into the lentil sauce. Cover the pan and keep warm for 20 minutes.
- Serve the dish with grated Parmesan cheese on top. Enjoy!
