Ingredients

  • 1 Small onion, minced
  • 3 Whole garlic cloves, minced
  • 2 Tablespoons (tbsp) olive oil
  • 1 19 Ounces (oz) can lentil soup
  • 1 Cup crushed tomatoes
  • 1 10 Ounces (oz) package frozen chopped spinach
  • 1 16 Ounces (oz) package ditalini pasta
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste
  • 1 Pinch crushed red pepper
  • 2 Tablespoons (tbsp) Parmesan cheese, grated

Steps

  1. In a large pan, brown the minced onion and minced garlic in olive oil over medium heat.
  2. Stir in the lentil soup and crushed tomatoes. Bring the mixture to a boil.
  3. Add the frozen chopped spinach and spices (salt, ground black pepper, and crushed red pepper) to the pan. Simmer the mixture.
  4. Meanwhile, cook the ditalini pasta in a large pot of boiling salted water until almost done. Drain the pasta.
  5. Mix the cooked pasta into the lentil sauce. Cover the pan and keep warm for 20 minutes.
  6. Serve the dish with grated Parmesan cheese on top. Enjoy!
