Ingredients

  • 0.75 Cups (cups) plain yogurt
  • 0.25 Cups (cups) lemon juice
  • 0.25 Cups (cups) vegetable oil
  • 4 Cloves garlic, minced
  • 2 Teaspoons (tsp) tomato paste
  • 1.5 Teaspoons (tsp) salt
  • 1 Teaspoon (tsp) dried oregano
  • 0.25 Teaspoon (tsp) black pepper, ground
  • 0.25 Teaspoon (tsp) allspice, ground
  • 0.25 Teaspoon (tsp) cinnamon, ground
  • 0.125 Teaspoon (tsp) cardamom, ground
  • 2 Pounds (lbs) chicken breast halves, boneless and skinless, divided
  • 2 Whole onions, divided
  • 1 Large green bell pepper, divided
  • 1 Cup (cup) fresh flat-leaf parsley, torn

Steps

  1. In a large bowl, mix together the yogurt, lemon juice, vegetable oil, minced garlic, tomato paste, salt, oregano, black pepper, allspice, cinnamon, and cardamom.
  2. Add the chicken pieces to the marinade, tossing to coat evenly. Transfer the chicken and marinade into a resealable plastic bag, squeeze out excess air, and seal. Marinate in the refrigerator for 4 hours.
  3. Preheat an outdoor grill to medium-high heat and lightly oil the grate.
  4. Thread the marinated chicken, onion chunks, and bell pepper pieces onto metal skewers.
  5. Grill the skewers on the preheated grill, cooking until the chicken is golden and no longer pink in the center, about 5 minutes on each side.
  6. Once cooked, sprinkle the torn parsley over the skewers before serving.
