Shrimp and Peanut Butter Noodles

Tender udon noodles are tossed in a sweet-salty peanut sauce with juicy shrimp and just-tender broccoli for balanced flavor and texture. The nutty richness, gentle tang from black vinegar, and sesame aroma make it a standout weeknight Dinner option. Serve Shrimp and Peanut Butter Noodles hot, topped with crunchy roasted peanuts for extra contrast.

In a small bowl, whisk together peanut butter, soy sauce, black vinegar, sugar, and sesame oil until the sauce is smooth and combined. Set aside.

Bring a large pot of water to a boil. Stir in the udon noodles and cook for 5 minutes. Add the shrimp to the boiling noodles and cook until the shrimp are pink and opaque, about 3 minutes. Turn off the heat but keep the pot on the burner. Stir in the broccoli, cover, and let sit for 2 to 3 minutes.

Drain the noodle mixture and move it to a large serving bowl. Pour the sauce over the top and stir to coat evenly. Garnish with peanuts to serve.
