  1. 1

Wash the oranges thoroughly. Use a peeler to strip off all the zest in long pieces; it's fine if some white pith comes off with it.

  2. 2

Place the peels in a saucepan and add 6 cups of cold water. Bring to a simmer over high heat, then lower the heat to medium-low to low and simmer until the peels are soft and tender, 45 minutes to 1 hour.

  3. 3

While that cooks, cut the oranges in half and juice them into a large measuring cup; you should have 1 cup. Add 1/2 cup cold water and set aside.

  4. 4

Take the peels off the heat and drain the water. Move the peels to a cutting board, and when cool enough to handle, slice the zest into very thin strips. Add them to the blood orange juice.

  5. 5

Pour the zest and juice mixture into the saucepan with the lemon juice and sugar. Bring to a simmer over medium-high heat, then reduce to medium-low; cook, stirring occasionally, until slightly reduced and thickened, 30 to 40 minutes. A probe or candy thermometer should register about 225 degrees F (107 degrees C).

  6. 6

Meanwhile, check jam jars for cracks and rings for rust, discarding any that are defective. Keep them submerged in simmering water until the juice mixture is ready. Wash new, unused lids and rings in warm, soapy water.

  7. 7

Ladle into sterilized jam jars and let cool to room temperature. Seal the jars and refrigerate for 8 hours, or overnight, before serving.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
