    Whisk 1 3/4 cups flour, salt, and baking powder in a large bowl. Cut in the vegetable shortening with a pastry blender until the mixture looks like coarse crumbs.

    Make a well in the center. Stir in the hot water, using a fork to work the flour mixture and water together. Move the mixture to a cutting board.

    Knead until a smooth, soft dough forms, about 3 minutes. Sprinkle in more flour if the dough is too sticky.

    Dust the cutting board with flour, cover the dough with the bowl, and let it rest for 15 minutes.

    Divide the dough into eight equal pieces; keep them covered until needed. Roll out the dough balls by hand or use a tortilla press.

    Heat a large skillet over medium-high. Place 1 tortilla in the skillet; cook until it starts to bubble, about 1 minute. Flip the tortilla; cook 1 minute more. Flip again and cook 1 minute more. Repeat with the remaining tortillas.
