Holiday Prime Rib Roast

Holiday Prime Rib Roast features a peppery horseradish-Dijon crust that melts into the beef, creating a deeply seasoned exterior and juicy, tender slices within. Roasted over onion, carrot, and celery, it develops rich drippings for a quick, meaty au jus that ties everything together. Perfect for a festive dinner or special winter gathering when you want a centerpiece with big, beef-forward flavor.

  1. 1

    Assemble all the ingredients.

  2. 2

The day before serving the prime rib, take the roast out of the package and pat it completely dry with paper towels. Set the roast on a baking sheet and refrigerate it overnight. Take it out of the refrigerator 1 hour before cooking so the beef can come to room temperature.

  3. 3

Rub the prime rib roast all over with horseradish and Dijon mustard. In a small bowl, mix the kosher salt, black pepper, thyme, and garlic powder; sprinkle this mixture over the roast.

  4. 4

Preheat the oven to 450 degrees F (230 degrees C). Put the celery, carrot, and onion in the bottom of a roasting pan; set the roast on top.

  5. 5

Roast in the preheated oven for 30 minutes. Lower the oven temperature to 350 degrees F (175 degrees C), and continue roasting until the beef is browned and an instant-read meat thermometer inserted into the thickest part of the roast registers 130 degrees F (54 degrees C) for medium-rare.

  6. 6

Remove from the oven, transfer the roast to a platter, and tent it with aluminum foil. Let it rest for 30 minutes. The temperature of the beef will increase by about 10 degrees during the resting time.

  7. 7

To make the au jus sauce: Skim off excess fat from the pan drippings in the roasting pan. Set the pan over medium heat and stir in beef base and 1 1/2 cups of water. Bring to a boil, scraping up and dissolving any browned bits from the bottom of the pan.

  8. 8

Strain out the vegetables and discard them. In a small bowl, combine cornstarch and 1 teaspoon of water until smooth; whisk this into the sauce.

  9. 9

Let the sauce thicken slightly; pour it into a gravy boat.

  10. 10

    Serve and enjoy!

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
