  1. 1

Make the sponge: Stir the warm water and yeast together in a small bowl. Let it sit for 5 minutes, or until creamy.

  2. 2

Combine the bread flour and warm water in a large bowl; stir in the yeast mixture for 4 minutes. Cover with plastic wrap and let the sponge sit at room temperature for at least 12 hours and up to 1 day.

  3. 3

Make the bread: Stir the warm milk and yeast together in a small bowl. Let it sit for 5 minutes, or until creamy.

  4. 4

Transfer the milk-yeast mixture to the bowl of a stand mixer fitted with a dough hook. Add the sponge, bread flour, warm water, and oil; mix until the flour is just moistened. Add the salt and continue mixing until the dough is smooth and elastic, about 8 minutes.

  5. 5

Scrape the dough into an oiled bowl and cover with plastic wrap. Let the dough rise at room temperature until doubled in size, about 1 1/2 hours. The dough will be sticky and full of air bubbles.

  6. 6

Turn the dough out onto a well-floured work surface and cut it in half. Move each half to a sheet of parchment and shape into an irregular oval about 9 inches long. Dimple the loaves with floured fingers and dust the tops with flour.

  7. 7

Cover the loaves with a damp kitchen towel. Let them rise at room temperature until almost doubled in size, 1 1/2 to 2 hours.

  8. 8

At least 45 minutes before baking the ciabatta, place a baking stone on the lowest oven rack; preheat the oven to 425 F (220 C).

  9. 9

Place 1 loaf on its parchment on a rimless baking sheet with a long side of the loaf parallel to the far edge of the sheet. Align the far edge of the baking sheet with the far edge of the baking stone in the preheated oven and tilt to slide the loaf with the parchment onto the back half of the stone. Transfer the second loaf to the front half of the stone the same way. Bake the ciabatta loaves until just golden, about 20 minutes. Cool the loaves on a wire rack.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
