Crispy Baked Gau

Crispy Baked Gau transforms the traditional steamed New Year dessert into a toasty, oven-baked treat with a caramel warmth from brown sugar and a gentle coconut aroma. The edges develop a faintly crisp bite while the interior stays chewy and tender, speckled with nutty sesame seeds. Ideal for sharing at festive gatherings or as a sweet snack with tea.

  1. 1

Preheat the oven to 350 degrees F (175 degrees C). Line an 8x12-inch pan with aluminum foil, extending it up the sides.

  2. 2

Sift the rice flour, brown sugar, white sugar, and baking soda into a large bowl. Make a well in the center and add the coconut milk, milk, and vanilla extract. Stir until smooth. Pour the batter into the prepared pan and sprinkle sesame seeds on top.

  3. 3

Bake in the preheated oven until a toothpick inserted in the center comes out clean, 50 to 55 minutes.

  4. 4

Let cool in the pan for 30 minutes, then remove the foil and place it on a cutting board with the top side up.

  5. 5

    Cut into 1-inch squares.
