Combine the apples and sugar in a large saucepan. Mix them together, then let sit until the apples begin releasing juice. Set over medium-high heat and stir often until the mixture comes to a boil. Boil vigorously for 1 minute, stirring often. Stir in the tapioca, lemon juice, and cinnamon until blended. Boil vigorously for 1 minute, stirring constantly.

  2. 2

Spoon the mixture into a sterilized 1-quart jar, adding it a spoonful at a time and making sure no air bubbles are trapped. Fasten the sterilized lid.

  3. 3

Set a rack in the bottom of a large stockpot and fill it halfway with boiling water. Using a holder, carefully lower the jar into the pot. If processing more than 1 jar, keep 2 inches of space between jars. Add more boiling water if needed until the top of the jar is covered by 2 inches of water. Bring the water to a full boil, cover, and process for 30 minutes.

  4. 4

Lift the jar out of the pot and set it on a cloth-covered or wooden surface, several inches apart from others, until cool. When cool, press the center of the lid with a finger to verify a tight seal (the lid should not move up or down). Store for up to 1 year.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
