    Put 1/4 of the potatoes, the onion, the eggs, the salt, the flour, and the baking powder into a food processor bowl; pulse several times until the vegetables are finely chopped. Add the remaining potatoes and pulse again until all the potatoes are finely chopped and the mixture is well combined.

    Warm canola oil in a skillet over medium heat. Scoop about 1/3 cup of the potato mixture at a time and place it in the skillet. Fry the latkes until the bottoms are brown and crisp, 2 to 3 minutes. Flip and cook the other sides until brown, 2 to 3 minutes more.
