Fresh Papaya Jam

Fresh Papaya Jam transforms ripe backyard papayas into a bright, fruity spread with a gentle citrus lift from orange juice.     In a very large pot over medium-high heat, stir together the papaya, orange juice, and pectin until it starts to boil, stirring constantly as it heats. When it boils, stir in the sugar and bring it back to a boil, stirring constantly. Once the jam returns to a boil, start a timer and boil for exactly 1 minute.

    Ladle the hot jam into the hot, sterilized canning jars and seal with lids and rings. Let cool to room temperature, and refrigerate any jars that do not seal.
