  1. 1

Preheat an outdoor grill to medium heat (350 to 375 degrees F (175 to 190 degrees C)). Remove any wilted outer leaves from the radicchio, then slice the head in half lengthwise through the core.

  2. 2

Brush the cut sides of the radicchio, avocados, and lemon with 1 tablespoon oil; place them cut side down on the grill grate along with the whole jalapeño. Cover the grill. Grill the radicchio, turning once halfway, until charred, 2 to 3 minutes. Grill the avocados and lemon until the cut sides are charred, 3 to 4 minutes. Grill the jalapeño, turning to char all sides, about 8 minutes.

  3. 3

When cool enough to handle, remove the core and roughly chop the radicchio and avocado; place them in a serving bowl. Remove the stem from the jalapeño and, if desired, remove the seeds.

  4. 4

For the zhug, blend the jalapeño, the juice of the grilled lemon, parsley, cilantro, garlic, coriander, salt, and the remaining 4 tablespoons oil in a blender or food processor until smooth.

  5. 5

Add the lettuce, Parmesan, and zhug to the radicchio and avocado mixture; toss to coat. Serve immediately.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
