- 1
Combine the salt, pepper, paprika, garlic powder, and cayenne in a small bowl to make a seasoned salt.
- 2
Set the fish on a large piece of parchment paper. Generously season the inside cavity with the seasoned salt. Stuff the chives, tarragon, and parsley into the cavity, tucking everything inside. Brush the outside of the fish with olive oil, then generously season both sides with the salt mixture.
- 3
Wrap the fish in the parchment paper and refrigerate for about 30 minutes to let the flavors meld. The fish can also be grilled right away if preferred.
- 4
Meanwhile, start a small charcoal fire in the grill and let it burn until the coals are nearly all white. If needed, push some coals away from the center so the heat is less intense directly under the fish.
- 5
Carefully place the stuffed fish on the grill. Grill the first side for about 4 minutes, then carefully flip. Grill the second side for about 4 minutes. If the heat is too high, cover the grill with the vent open during cooking to lower the temperature of the coals. After both sides have browned, you can carefully turn the fish back and forth every few minutes until it reaches your desired doneness.
- 6
Check doneness with a thermometer; the internal temperature at the thickest part should be 135 degrees F (57 degrees C). Remove the fish from the grill and serve with fresh lemon wedges.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
