  1. 1

Scrub Idaho® Russet Potatoes well without peeling. Place the potatoes in a stockpot, add enough water to cover them, and bring to a boil over high heat. Lower the heat to medium-high and cook for 12 to 15 minutes, or until a knife slides in easily but the potatoes remain firm. Drain the hot water and add cold water to the pot to cool the potatoes. Set the potatoes aside while you prepare the remaining ingredients.

  2. 2

Remove the yolks from 4 of the hard-boiled eggs. Discard them or save for another use. Roughly chop the 4 egg whites and 2 of the whole eggs, reserving 2 whole eggs for garnish. Place the chopped eggs in a large mixing bowl. Add the onion and chopped pickles to the bowl.

  3. 3

In a small mixing bowl, combine the mayonnaise, Miracle Whip, Greek yogurt, dill pickle brine, yellow mustard, garlic powder, salt, and pepper. Whisk thoroughly to combine; set aside.

  4. 4

Remove the cooled potatoes from the water. Use a paring knife to peel off the skins (they should come off easily). Cut the potatoes into small cubes and add them to the other ingredients in the mixing bowl. Using a wooden spoon, gently toss the salad ingredients to mix. Add the dressing mixture and gently toss again to coat everything well.

  5. 5

Transfer the potato salad to a serving bowl. Slice the remaining 2 eggs into thin rounds and arrange them around the salad for garnish. Cover and refrigerate for at least 3 hours before serving (preferably overnight) to allow the flavors to blend.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
