  1. 1

Preheat the oven to 425 degrees F (220 degrees C). Line a large baking sheet with parchment paper. In a large bowl, whisk together the flour, baking powder, baking soda, and fine sea salt.

  2. 2

Coat the whole stick of butter in the flour mixture. Grate the butter on the large holes of a box grater into the bowl. If the butter begins to melt, coat it in the flour mixture again and continue grating. Use your fingers to toss the butter in the flour mixture until all the pieces are separated and coated in flour; the mixture should look like coarse crumbs.

  3. 3

Whisk the ricotta and water together in a small bowl; add to the flour mixture. Gently fold to bring the dough together. The dough should be moistened but still crumbly. If the dough is too dry, add more cold water, 1 tablespoon at a time, until fully moistened.

  4. 4

Turn the dough out onto a lightly floured work surface. Lightly knead three or four times until it comes together. Sprinkle with flour; pat to 3/4-inch thickness. Cut the dough into four equal portions. Stack the portions, press down, and pat again to form a 3/4-inch-thick rectangle. Repeat this process three times, adding flour as needed.

  5. 5

Press a 2 1/2- to 3-inch biscuit cutter straight down into the dough to cut out biscuits. Gently knead the scraps together, pat to 3/4-inch thickness, and cut again. Arrange the biscuits on the prepared baking sheet so they are barely touching.

  6. 6

Bake in the preheated oven until the tops are crisp and golden brown, 15 to 16 minutes. Let cool on the baking sheet for 5 minutes.

  7. 7

Stir the fresh herbs and lemon zest together in a small bowl. Brush the tops of the baked biscuits with melted butter; sprinkle with the herb mixture and Parmesan cheese. Store in an airtight container up to 3 days; chill up to 1 week. To reheat, bake about 10 minutes at 375 degrees F (190 degrees C).

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
