Homemade Hamburger Buns

Homemade Hamburger Buns bake up soft, tender, and lightly sweet with a delicate golden crust and a hint of nuttiness from sesame seeds. Homemade Hamburger Buns

    Put the yeast in the bowl of a large stand mixer; whisk in 1/2 cup flour and the warm water until smooth. Let sit until the mixture turns foamy, 10 to 15 minutes.

    Whisk 1 egg, the melted butter, sugar, and salt thoroughly into the yeast mixture. Add the remaining flour (about 3 cups).

    Attach the dough hook to the stand mixer and knead on low speed until the dough is soft and sticky, 5 to 6 minutes. Scrape down the sides if needed. Poke and prod the dough with a silicone spatula; if large amounts cling to the spatula, add a little more flour.

    Turn the dough out onto a floured work surface; it will be sticky and elastic but should not stick to your fingers. Gently shape it into a smooth, round ball, tucking any loose ends underneath.

    Wipe out the stand mixer bowl and drizzle in olive oil. Place the dough in the bowl and turn it several times to lightly coat the surface with oil. Cover the bowl with aluminum foil and let the dough rise in a warm spot until doubled in size, about 2 hours.

    Line a baking sheet with a silicone mat or parchment paper.

    Move the dough to a floured work surface and pat it to release any bubbles; shape it into a slightly rounded 5x10-inch rectangle, about 1/2 inch thick.

    Lightly dust the dough with flour if needed and cut it into eight equal pieces. Shape each piece into a round, gently tucking the ends underneath as before.

    With your hands, gently pat and stretch the dough rounds into flat discs about 1/2 inch thick. Arrange the buns about 1/2 inch apart on the prepared baking sheet. Dust the tops very lightly with flour. Loosely drape a piece of plastic wrap over the baking sheet (do not seal). Let the buns rise until doubled in size, about 1 hour.

    Preheat the oven to 375 degrees F (190 degrees C).

    In a small bowl, beat the remaining egg with the milk using a fork until well combined. Very gently and lightly brush the tops of the buns with the egg wash without deflating the risen dough. Sprinkle each bun with sesame seeds.

    Bake in the preheated oven until the tops are lightly browned, 15 to 17 minutes. The buns will stick together slightly where they touch. Let cool completely. Tear the buns apart and slice in half crosswise to serve.
