Put the yeast in the bottom of a large mixing bowl. Add the water and stir, then mix in the salt. Add the flour and beat with a wooden spoon until the dough is thick and sticky and pulls flour from the sides of the bowl, 5 to 10 minutes.
- 2
Cover the bowl with plastic wrap and let it stand in a turned-off oven until it doubles in volume, 12 to 14 hours. The dough will be bubbly and very sticky.
- 3
Line a baking sheet with a silicone mat and generously dust it with cornmeal.
- 4
Using a floured spatula, scrape the dough onto a well-floured work surface. Dust the dough with flour. With well-floured hands, pat the dough into a rectangle. Cut this rectangle into four equal pieces.
- 5
Lightly flour one piece of dough and stretch it with floured fingers into a log about 10 inches long and 1 1/2 inches around. Gently move it to the prepared baking sheet. If desired, wipe off excess cornmeal with a damp paper towel. Repeat with another piece of dough. (Reserve the remaining dough to bake later or prepare another baking sheet to bake all four loaves at once).
- 6
Lightly dust the loaves with flour. Dust a large piece of plastic wrap with flour and drape it loosely over the baking sheet with the floured side down. Let the loaves rise, covered, until doubled in volume, 1 to 1 1/2 hours.
- 7
Adjust the oven racks to the bottom and middle positions and preheat to 500 degrees F (260 degrees C) or as high as your oven allows. Place an oven-proof baking dish filled with water on the bottom rack.
- 8
Using sharp kitchen shears, cut four or five angled slashes on top of each loaf. Press down any sharp tips of dough left by the scissors. Spray the loaves with water using a spray bottle.
- 9
Bake in the preheated oven until the baguettes are browned, about 15 minutes, spraying the loaves with water after 5 minutes and again at 10 minutes. Turn the pan around during the second spraying.
- 10
Move the baguettes to a cooling rack and let them cool to room temperature before slicing with a serrated knife.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
