  1. 1

    Assemble the ingredients.

  2. 2

Place the green bell pepper and 12 whole jalapeño peppers in a food processor or blender, working in batches if needed; process until finely chopped.

  3. 3

Move the peppers to a large saucepan. Stir in the cider vinegar and bring to a boil. Reduce the heat and simmer for 15 to 20 minutes.

  4. 4

Strain the mixture through at least 2 layers of cheesecloth and discard the pulp. You should end up with about 1 cup of liquid.

  5. 5

Return the liquid to the saucepan; stir in the salt and sugar until dissolved. Bring to a boil over medium-high heat. When it reaches a rolling boil (one that cannot be stirred down), boil for one minute, then stir in the liquid pectin.

  6. 6

Stir in the remaining finely chopped jalapeño peppers.

  7. 7

Ladle into sterile jars, leaving 1/4-inch headspace.

  8. 8

Set a rack in the bottom of a large saucepan and fill it halfway with water. Bring to a boil and lower the jars, spaced 2 inches apart, into the boiling water using a holder. Add more boiling water to cover the jars by at least 1 inch. Return to a rolling boil, cover, and process for 10 minutes. Seal the jars in a hot water bath.

  9. 9

Store in a cool place. Refrigerate the jelly after the seal is broken.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
