    Preheat the oven to 425 degrees F (220 degrees C). Lightly grease the baking trays.

    Stir the water and sugar together in a bowl until the sugar dissolves; add the yeast. Let the mixture sit until the yeast softens and a creamy foam forms, about 5 minutes.

    Whisk the flour, butter, and salt together in a bowl until combined; add the yeast mixture and stir with a fork until the dough starts to cling. Turn the dough onto a floured work surface and knead until smooth.

    Divide the dough into 15 equal pieces and roll each piece between your hands into ropes at least pencil-thick. Twist the dough into your desired shapes.

    Pour 4 cups of hot water into a bowl; stir in the baking soda until dissolved. Dip each pretzel into the baking soda solution and place on baking sheets. Brush with egg and sprinkle coarse salt over each.
