    Combine the milk, egg whites, butter, sugar, lemon juice, and salt. Gradually add the cassava flour, stirring until smooth and free of lumps. The batter should be very thin but thick enough to coat a spoon.

    Preheat a nonstick pan over medium-low heat. Pour about 1/4 cup of batter into the pan and quickly swirl to spread it as thin as possible. Cook until just lightly golden, about 3 minutes per side. Transfer the crepe to a plate and repeat with the remaining batter.
