Put the cucumbers and onions in a large bowl; sprinkle them with the salt. Add enough water to cover the vegetables.
- 2
Let stand for 8 to 10 hours. Drain and rinse with water.
- 3
Check four 1-quart jars for cracks and the rings for rust, discarding any that are defective. Keep them immersed in simmering water until needed. Wash the new, unused lids and rings in warm, soapy water.
- 4
Combine the sugar and flour in a large pot. Whisk in the vinegar, turmeric, mustard powder, and celery seed until a smooth paste forms. Add the cucumbers and onions; add enough water to cover. Stir and bring to a boil. Cook, stirring often, until thickened, about 10 minutes.
- 5
Ladle the cucumbers, onions, and pickling liquid into the hot, sterilized jars, filling to within 1/2 inch of the top. Run a clean knife or thin spatula around the inside of each jar to release any air bubbles. Wipe the rims with a damp paper towel to remove residue. Place the lids on and screw the rings on tightly.
- 6
Set a rack in the bottom of a large stockpot and fill it halfway with water. Bring to a boil and lower the jars, spaced 2 inches apart, into the boiling water using a holder. Add more boiling water to cover the jars by at least 1 inch. Return to a rolling boil, cover, and process for 10 minutes.
- 7
Lift the jars out of the stockpot and let them rest, several inches apart, for 12 to 24 hours. Press the center of each lid to make sure it does not move up or down. Remove the rings for storage and keep in a cool, dark place.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
