Combine the flour, yeast, and salt in a large bowl and stir to mix. Add the water and herbs, if using, and stir until well mixed. The dough will be very sticky and shaggy. Cover the bowl with plastic wrap and leave it at room temperature for 18 to 24 hours.
- 2
Generously flour a work surface. The dough will have risen and be covered with bubbles. Transfer the dough onto the work surface and dust it with flour. Fold the dough in half, then shape it into a ball by stretching and tucking the edges underneath.
- 3
Liberally flour a kitchen towel (do not use terrycloth). Place the dough ball on the floured towel. Cover it with another floured towel. Let the dough rise for about two hours [see footnote].
- 4
Preheat the oven to 450 degrees F (230 degrees C). Place a lidded Dutch oven or deep heavy-duty casserole dish (with lid) in the oven to preheat.
- 5
Carefully take the hot baking dish out of the oven. Remove the lid and gently turn the dough ball into the ungreased baking dish, seam-side up; shake the dish to distribute the dough more evenly.
- 6
Cover and bake for 30 minutes. Remove the lid and bake until the crust is golden brown, 15 to 20 minutes. Take the loaf out of the baking dish and let it cool on a rack before slicing.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
