  1. 1

Combine the chopped oranges and 1 tablespoon water in a small saucepan, cover, and cook over medium-low heat until the oranges are soft and the excess liquid has evaporated, about 30 minutes. Set aside to cool, about 20 minutes.

  2. 2

Preheat the oven to 350 degrees F (175 degrees C). Line the bottom and sides of an 8-inch springform pan with parchment paper.

  3. 3

Place the oranges in the bowl of a food processor and pulse until finely chopped.

  4. 4

Beat the egg whites in a glass, metal, or ceramic bowl until stiff peaks form. Gradually add 1/2 cup sugar, continuing to beat for 1 more minute.

  5. 5

Beat the egg yolks and the remaining 1/2 cup sugar in a separate bowl until pale and thick, 2 to 3 minutes. Whisk in the finely chopped oranges. Fold in the ground almonds, semolina, vanilla extract, and fiori di Sicilia. Stir in 3 spoonfuls of the whisked egg white to loosen the batter. Gently fold in the remaining egg whites with a spatula or large metal spoon. Pour the batter into the prepared springform and level the top.

  6. 6

Bake in the preheated oven until the cake is golden and a skewer inserted in the center comes out clean, about 50 minutes. Check the cake after 20 and 30 minutes to see if it is starting to brown too quickly. Cover the top lightly with aluminum foil once the cake starts to brown.

  7. 7

Remove from the oven and cool in the pan. Remove the ring, peel away the parchment paper, and transfer the cake to a serving plate. Drizzle with liqueur and dust with confectioners' sugar.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
