Peppy's Homemade Pita Rounds
Peppy's Homemade Pita Rounds bake up soft and airy with a gentle chew and that signature pocket perfect for stuffing. Put all ingredients into the bread pan of your bread machine, choose the Dough setting, and start it. When the dough has risen long enough, the machine will beep.

Turn the dough out onto a lightly floured surface. Gently roll and stretch it into a 12 inch rope.

Using a sharp knife, cut the dough into 8 pieces. Roll each piece into a smooth ball.

With a rolling pin, roll each ball into a 6 to 7 inch circle. Set them aside on a lightly floured countertop.

Cover with a towel. Let the pitas rise about 30 minutes until slightly puffy.

Preheat the oven to 500 degrees F (260 degrees C). Place 2 or 3 pitas on a wire cake rack and set the rack directly on the oven rack.

Bake the pitas 4 to 5 minutes until they puff and the tops start to brown.

Remove from the oven and immediately place the pitas in a sealed brown paper bag or cover them with a damp kitchen towel until soft.

Once the pitas are softened, either cut them in half or split the top edge for half or whole pitas. Store them in a plastic bag in the refrigerator for several days or in the freezer for 1 or 2 months.
