Popovers

Popovers bake up tall with crackly shells and soft, custard-like middles that steam when torn open. A quick mix and a blast of high heat give them their lift, while the lower finish sets them without collapse. Serve Popovers hot for breakfast or as a light side with butter, jam, or honey.

    Preheat the oven to 450 degrees F (230 degrees C). Grease and flour six 6-ounce custard cups.

    Lightly beat the eggs in a medium bowl. Beat in the flour, milk, and salt just until smooth, being careful not to overbeat.

    Fill the custard cups 1/2 full.

    Bake in the preheated oven for 20 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C) and bake for another 20 minutes. Immediately remove from the cups and serve very hot.
