In a medium bowl, mix the flour and salt. Cut in the butter with a fork until the pieces are very small. Stir in the water and mix until well combined. If the dough is too sticky, add a little more flour until you can knead it on a floured surface. Knead the dough for 2 to 3 minutes. Cover and let it rest for 10 or 15 minutes.

On a lightly floured surface, roll the dough to 1/4 inch thick. Cut out circles with a cookie cutter or a large glass. Set them aside while you make the filling.
- 3
To make the filling, prepare the mashed potato flakes as directed on the package; set aside. Heat the olive oil in a skillet over medium heat. Add the onions and cook, stirring, until soft and translucent. Remove from the heat and mix in the mashed potatoes.
- 4
Spoon one tablespoon of pierogi filling onto each dough circle. Fold the circles over and pinch the edges firmly to seal so no filling escapes while they boil. If you like, you can freeze them at this point.
- 5
Bring a large pot of water to a boil. Carefully drop several perogies into the boiling water. They are done when they float to the top. Repeat with the remaining perogies. If you like, you can also fry the perogies in some butter with onion before serving.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
