  1. 1

Mix bread flour, water, and sourdough discard together with a wooden spoon. Add a little flour to the bowl of a stand mixer. Add the starter mixture and allow it to rise in a warm area, away from direct sunlight, until doubled in size, about 2 hours.

  2. 2

Attach the dough hook and begin mixing the starter. Add the remaining flour, oil, and salt. Mix in enough of the remaining water until the dough pulls away from the sides of the bowl and forms a ball; you may not need all the water. Knead the dough in the mixer for 5 minutes.

  3. 3

Transfer the dough to a work surface and knead by hand for 5 minutes. Score and cover with a cloth. Allow it to rise in a draft-free place until doubled in volume, at least 2 hours and up to overnight.

  4. 4

Lightly oil a shallow baking pan. Knead the dough for 5 minutes. Spread it into the pan using your hands. Whisk oil and water together. Sprinkle a little of the mixture over the focaccia. Cover with plastic wrap and let rise until doubled in height.

  5. 5

Preheat the oven to 400 degrees F (200 degrees C).

  6. 6

Press your fingertips into the focaccia, leaving indentations evenly spaced. Distribute the olives and cherry tomatoes evenly on top, pushing them into the dough. Sprinkle the rosemary leaves and flaked salt on top. Sprinkle a little more of the oil-water mixture on top.

  7. 7

Bake in the preheated oven until browned and cooked through, 20 to 25 minutes. Drizzle olive oil on top before serving.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
