Preheat the oven to 400 degrees F (200 degrees C).
- 2
Place the ground beef in a skillet, and cook, stirring, until browned and crumbly, breaking it into chunks as it cooks, about 10 minutes. Drain the grease. Transfer the ground beef to a large mixing bowl.
- 3
Tear the bread into rough chunks and place them in a bowl; soak the bread in water until moistened, then squeeze out the water. Crumble the wet bread into the bowl with the ground beef. Mix in the onion, celery, mushrooms, 4 cloves of garlic, flat-leaf parsley, Parmesan cheese, and egg until thoroughly combined. Season with salt and black pepper.
- 4
Rinse the turkey and pat it dry with paper towels. Lightly stuff the turkey with the ground beef mixture, and place it in a lidded roasting pan. Rub the turkey with olive oil, squeeze lemons over it, and sprinkle 2 more cloves of garlic, the garlic powder, and more salt and black pepper over the bird.
- 5
Roast the turkey uncovered in the preheated oven until the skin is browned, about 45 minutes. Reduce the heat to 350 degrees F (175 degrees C), and cover the turkey with the lid. Continue roasting until the juices run clear and an instant-read meat thermometer inserted into the thickest part of a thigh reads 180 degrees F (80 degrees C), about 5 more hours. Baste occasionally. If the bottom of the roasting pan looks dry, pour in water.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
