Place the chicken in a small stockpot, cover with water, and add the carrots, celery, and onion. Bring to a boil, then lower to a simmer. Cook for about 1 hour and 15 minutes, or until the chicken is done and starting to fall off the bone.
- 2
Take the chicken out of the pot and set it aside to cool. When it is cool enough to handle, pull the meat from the bones. Return the bones and skin to the stockpot, increase the heat to bring the liquid back to a boil, and cook until reduced by half, 10 to 15 minutes.
- 3
Strain out the bones and vegetables, return the liquid to the pot, and season with salt and pepper.
- 4
Add the beans and bean sprouts to the stock and simmer until the beans are tender, about 8 minutes. Stir in the pulled chicken meat and mix well. Remove from the heat, then strain the chicken and vegetable filling until dry. Let it cool completely before making the lumpia, at least 15 minutes.
- 5
Set 1 wrapper on the table or cutting board and place 1/4 cup of the chicken filling in the lower quarter of the wrapper. Fold the wrapper over the filling, then roll once. Fold in the ends to enclose the filling, then continue rolling until almost to the top. Brush the edge of the wrapper with egg, fold over, and seal. Repeat until all the filling is used.
- 6
Heat about 1 1/2 inches of vegetable or canola oil to 350 degrees F in a medium, deep-sided saucepan. Fry the lumpia in the hot oil a few at a time, turning each until golden brown. Remove from the oil and set on paper towels to drain excess oil.
- 7
Stir together the soy sauce, vinegar, and garlic. Serve the lumpia with the dipping sauce.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
