Wifey's Lemony Zoodles

    Use a spiralizer to cut the zucchini into noodles. Set the noodles in a colander in the sink. Lightly season with salt. Let them sit for 20 to 30 minutes.

    Preheat the oven to 375 degrees F (190 degrees C). Coat a baking sheet with cooking spray.

    Arrange the onion slices on one side of the baking sheet and the radishes on the other. Drizzle 1 tablespoon olive oil over them.

    Stir together the kosher salt and lemon zest in a small bowl; rub them with your fingers until fragrant. Sprinkle the mixture over the onion and radishes.
