Albondigas brings together tender beef meatballs simmered in a salsa-forward beef broth with soft carrots and potatoes for a warming, robust bowl. The bouillon adds depth while fresh cilantro brightens each spoonful, making it a comforting option for weeknights or casual family dinners.

  1. 1

In a large stockpot, bring water, carrots, potatoes, onion, salsa, and bouillon cubes to a boil; reduce the heat and simmer at a medium level, stirring occasionally, for 10 minutes.

  2. 2

In a bowl, combine the beef, bread crumbs, and milk.

  3. 3

Shape the mixture into 1-inch meatballs and drop them into the broth; bring the soup to a boil, then reduce the heat to medium-low.

  4. 4

Cover and cook until the meatballs are no longer pink in the center and the vegetables are tender, about 20 minutes.

  5. 5

Garnish with cilantro sprinkled on top.
