In a large bowl, use an electric mixer to break up the almond paste. Add the almonds, sugar, and salt; continue mixing until the almond paste is smooth. On high speed, beat in the butter, egg whites, almond extract, and amaretto liqueur until as fluffy as possible. Set aside.

Working with half of the dough at a time, roll it out on a lightly floured surface into a rectangle about 8 inches wide and 1/4 inch thick. Trim the edges. Cut the dough lengthwise to make two strips that are 4 inches wide.
- 3
Preheat the oven to 400 degrees F (200 degrees C). Line baking sheets with parchment paper.

Fill a pastry bag halfway with the almond filling and pipe a stripe of filling down the center of each strip. Whisk the egg and water together. Brush this onto one edge of each strip. Fold each strip over the filling and press gently to seal. Brush each piece with the egg wash and sprinkle sliced almonds on top. Cut into 3 to 4 inch pieces, then cut 1/2 inch slits into the sealed edge to form the "claws." Place the bear claws at least two inches apart on the baking sheets. Refrigerate, then repeat with the remaining half of the dough.

Bake in the preheated oven for 25 to 30 minutes, until the almonds are toasted and the pastry is golden brown. Cool and dust with confectioners' sugar just before serving.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
